WALLA
WALLA WINE TASTING:
BERESAN
CABERNET
SAUVIGNON 2005

The 2005 Cabernet
Sauvignon is once again made from a
blend of our Estate Waliser Vineyard
and Yellow Jacket Vineyard. The
vineyards are planted on old cobblestone
river bed soils, providing the wine
with unique and distinct earthy minerality
qualities,
but the wine is really defined by the
big fruity backbone of cranberry and
pomegranate flavors.
This wine is 100% Cabernet Sauvignon.
The wine was aged for 21 months in 35%
new French oak and 65% neutral barrels.
The wine will be bottled for 5 months
prior to
release.
The 2005 season started out cooler and
mild with very nice weather during bud
break and spring growth. Bloom period
was
warm and consistent for great fruit
development. Once again we had a long
hot summer for good growing conditions.
Fall
conditions were perfect for flavor development.
All of the varieties were managed separately
and fermented in small bins. Punch down
was performed 2-3 times daily, followed
by
pressing and primary fermentation. The
wine was racked into oak barrels and
inoculated for malolactic fermentation.
100% Cabernet Sauvignon
BERESAN
- SEMILLON 2006
ur
2006 Semillon is made from Estate Fruit
from the Walla Walla Valley, that shows
lots of pear, honey and hints of citrus.
A
very luscious, smooth and pleasing wine
that works great with food or alone.
The wine was aged for 8 months in a stainless
steel tank, and the wine will be in the
bottle for 3 months prior to release.
The 2006 season started out cooler and
mild with very nice weather during bud
break and spring growth. Bloom period
was warm
and consistent for great fruit development.
Once again we had a long hot summer for
good growing conditions, and an earlier
than normal harvest. Fall conditions were
perfect for flavor development.
From
Boom
Boom is a new brand from Charles (House
Wine, K Vintners)Smith. This appealing
Syrah offers a boatload of flavor and
freshness withoutsacrificing the depth
and complexity. There's plenty of snap
and sizzle;blueberry and boysenberry
fruit underscored with layers of carefully
managedvanilla, tobacco and silky tannins.

BASEL
CELLARS
CLARET 2005

Blend: 68% Cabernet Sauvignon,
24% Merlot 8% Cabernet Franc
Vineyards: Pheasant Run Vineyard/
Chelle Den Mille
Case Produced:896
The 2005 Walla Walla Valley Claret
continues the tradition of providing
a great everyday drinking, fruit-forward
red wine with the exceptional quality
expected from Basel Cellars.
Our Estate vineyard, Pheasant Run,
provided the majority of the fruit
for this wine. Our blend of
68% Cabernet Sauvignon, 24% Merlot
and 8% Cabernet Franc is medium ruby
red in color, and has an amazing floral,
herbal scent which leads to flavors
of red Cherries, Cassis, Raspberries
and some Tea Leaf. The tannins
are well integrated and the acids
are elevated enough to pair with rich
foods.
BASEL CELLARS
SYRAH 2005 (Huge Price
Drop!)
Cases Produced: 844
Vineyard: Pheasant run Vineyard/
Lewis Syrah
Varietal: 100% Syrah
$36/ Bottle
We combined 74% Pheasant Run Vineyard
Syrah with 26% Lewis Vineyard Syrah.
The wine was aged for 19 months in
100% French Oak of which 18% of the
barrels were new. While Lewis
Vineyard provides both the extremely
dark color and balanced acid profile,
our Estate fruit is the true star
here. It begins with an earthy
elegance, then moves on to the blueberry
and plum flavor. Hints of raspberries
on the long, fine-grained finish round
out this beautifully complex wine.
It should age gracefully for another
10 years.
