(Ah-see-ay) Means "steel" in french. No oak, no malolactic, just whole cluster pressed and fermented in temperature controlled stainless steel tanks. Incredible aromas of honeysuckle, passion fruit, grapefruit and and pippin apple. Crisp, clean and bright, it all culminates in a lengthy acid finish.

A bold and unique blend specifically tailored to a woman's palate, created by vintner Phyllis Rodgers and winemaker Genevieve Llerena. Carmel Valley Estate
The 2003 Joullian Estate Cabernet Sauvignon has the best combination of richness and balance since the 1997 vintage. Rich, robust, balanced and concentrated - this is Carmel Valley Cabernet at its finest. Note that our new French oak barrels add spice, not overtly woody flavors...3-year air dried stavewood makes the difference. Fermentation with multiple yeast strains boosts aromas, amplifies black fruit/anise flavors, and "texturizes" the ample tannins of the Bordeaux varietals.
Enjoy our marriage of Cabernet Sauvignon, Merlot, and Cabernet Franc now, or after 10-15 years in the bottle.The wine will always remain balanced, fruity, and with ever increasing perfume.

12004 Sias Cuvée Zinfandel · Carmel Valley Estate

Dick Sias, cofounder of Joullian Vineyards, is considered the father of Zinfandel in Carmel Valley. In 1984, he supervised the planting of Carmel Valley's first Zinfandel vines at Joullian.We began with a non-heat-treated Amador County clone selected by Dr. Bioletti in 1917, and have since added pre-prohibition vineyard selections from Lytton Springs, Brandlin (Mt.Veeder), St. Peter's Church (Cloverdale) and Primitivo-3 (Puglia, Italy). For complexity, we also have small amounts of Petite Sirah (Lytton Springs), plus our Italian field crush varieties: Aleatico, Alicante Bouchet, Carignane and Black Grenache. Joullian's multi-clonal approach in the vineyard continues to reap multidimensional benefits in the winery. Malolactic fermentation was completed in French oak barrels and bottled unfined, unfiltered.
TASTING NOTES: May, 2007
Very dark garnet color with a ruby rim. Powerful black raspberry, anise and spicy floral nose. Balanced ripe raspberry, plum and strawberry flavors expand into a lively red currant-red plum midpalate. A long, clean finish is enhanced with nuances of vanilla, black pepper and anise.

1Brassfield Sauvignon Blanc 2005
Cooler growing conditions allow for longer grape hang-times enhancing flavor development, and better acid retention in the juice and finished wine. 11% Semillon from a new, young vineyard was blended to add more body to the mid-palate prior to bottling. Citrus aromas with a hint of mineral are intertwined by complex bouquets of gooseberry, grapefruit and a hint of fresh taragon. The wine has good weight on the palate, is framed by a good acid backbone, and finishes crisp and smooth.
